<p>Forget dry pork tenderloin and difficult cooking methods! I promise you a juicy pork tenderloin, with a wonderful feta cheese sauce. And of course, grilled cheese that goes perfectly with tomatoes! At the end of the recipe, there is a helpful video.</p>







<h3 class="wp-block-heading"><strong>INGREDIENTS SERVING 4 PEOPLE</strong></h3>



<h4 class="wp-block-heading">For the pork</h4>



<ul class="wp-block-list">
<li>2 pork tenderloins about 800 gr each</li>
<li>4 leaves of sage</li>
<li>100 ml extra virgin olive oil</li>
<li>Garlic powder</li>
<li>Rosemary</li>
<li>Salt</li>
<li>Black pepper</li>
<li>Thyme</li>
<li>Oregano</li>
<li>Ginger</li>
</ul>



<h4 class="wp-block-heading">For the sauce</h4>



<ul class="wp-block-list">
<li>Feta cheese around 400 gr (or goat cheese)</li>
<li>1 heavy cream 500 ml</li>
<li>1 shot of white wine </li>
<li>⅓ spoon of rosemary</li>
<li>Black pepper</li>
<li>Salt</li>
</ul>



<h4 class="wp-block-heading">For the serving</h4>



<ul class="wp-block-list">
<li>Cheese</li>
<li>Fresh tomatoes</li>
<li>Sage leaves</li>
</ul>



<h3 class="wp-block-heading"><strong>How to prepare the pork tenderloin</strong></h3>



<p class="dropcapp4"><strong>Step 1:</strong> Chop the sage.</p>



<p class="dropcapp"><strong>Step 2:</strong> In the mini food processor put the olive oil, and the chopped sage and beat for 2 minutes.</p>



<p class="dropcapp"><strong>Step 3:</strong> And extremely important! As you know, pork tenderloin is not uniform in shape. At its edge, it is thinner. This means, that you have to cut the edge of it so that it cooks evenly! </p>



<p class="dropcapp4"><strong>Step 4:</strong> Brush all the pieces of the pork, on all sides, with the sage oil. Then add the rest of the spices.</p>



<p><strong>Step 5: </strong>In a non-stick pan, put some olive oil, and once it&#8217;s hot:</p>
<p>-Bake the pork tenderloin for 8 minutes, on each side.</p>
<p>-Bake its end sides for 5 minutes.</p>
<p>-During the last 5 minutes, cover the pan with a lid.</p>
<p>Do not lift the meat to see if it is cooked. Follow the times and don&#8217;t be afraid that it will burn!</p>



<p class="dropcapp4"><strong>Step 6:</strong> Place the pork on a plate and cover tightly with aluminum foil. Leave the meat covered for about 15-20 minutes, without opening it at all. In the meantime, let&#8217;s go make the amazing cheese sauce!</p>



<h3 class="wp-block-heading">How to make the sauce for the Feta cheese sauce</h3>



<p class="dropcapp"><strong>Step 7:</strong> Grate the cheese. I use feta cheese or odorless goat cheese.</p>



<p><strong>Step 8:</strong> In a non-stick saucepan, put the cheese, cream, wine, salt, plenty of black pepper, and rosemary. Over medium heat, stirring constantly, until the cheese is completely melted.</p>



<h3 class="wp-block-heading">How to serve</h3>



<p><strong>Step 9:</strong> Cut the cheese into the shape you like, as long as it is the same thickness to cook evenly. Bake in a griddle pan or regular pan.</p>

<p><strong>Step 10:</strong> Place the pork on a cutting board and cut it into slices of equal thickness. You will see that while it is dark on the outside, it is juicy and tender inside, always properly cooked but without drying out!</p>

<p><strong>Step 11:</strong> Transfer the pork tender to the plate, pour over the warm goat cheese sauce, put two slices of grilled cheese and the tomatoes and&#8230;</p>

<p id="block-95e66c17-8aae-4471-8b9b-e960436fece8">Απλώς ακολουθήστε την συνταγή μου με αυτούς τους απλούς κανόνες και ετοιμαστείτε να ξεχάσετε οτι σκληρό, άνοστο και αχυρένιο χοιρινό στο φούρνο έχετε φάει!</p>



<p>Συνοδεύεται με ότι λαχταρά η όρεξη σας όπως ρύζι, πατατούλες κλπ και φυσικά δεν ξεχνάμε το τζατζίκι που βοηθάει στην πέψη.</p>

<ul class="wp-block-list"><li>2 κιλά χοιρινό λαιμό άνευ οστού</li><li>Σκόρδο σκόνη ή φρέσκα λιωμένα</li><li>Μουστάρδα σκόνη ή την κλασσική στο μπουκάλι</li><li>Πάπρικα καπνιστή</li><li>Δεντρολίβανο</li><li>Ελαιόλαδο</li><li>Αλάτι</li><li>Πιπέρι</li><li>Θυμάρι</li><li>Ρίγανη</li><li>Μέλι (προαιρετικά)</li></ul>



<h3 class="wp-block-heading" style="font-size:20px"><strong>ΠΩΣ ΘΑ ΦΤΙΑΞΕΤΕ ΤΟ ΧΟΙΡΙΝΟ ΣΤΟ ΦΟΥΡΝΟ</strong></h3>



<p class="dropcapp"><strong>Βήμα 1:</strong> Στρώνετε στον πάγκο σας αλουμινόχαρτο και οπωσδήποτε, βάζετε απο πάνω λαδόχαρτο.</p>

<p class="dropcapp"><strong>Βήμα 2:</strong> Ρίξτε ελαιόλαδο σε όλη την επιφάνεια, αλείψτε με ένα πινέλο να πάει παντού και προσθέστε την μουστάρδα. Αν ανήκετε σε εκείνους που τους αρέσει το μέλι στο χοιρινό, προσθέστε ομοιόμορφα μέλι.</p>

<p><strong>Βήμα 4:</strong> Χαράξτε το κρέας, λαδώστε το παντού και ρίξτε όλα τα μπαχαρικά. Μετά, αλείψτε με τα χέρια σας το κρέας για να πάνε τα μπαχαρικά παντού.</p>

<p><strong>Βήμα 5:</strong> Τυλίξτε το κρέας και βάλτε το στο ψυγείο για 24 ώρες. Το κρέας πριν μπει στον φούρνο, πρέπει <strong>οπωσδήποτε</strong> να είναι σε θερμοκρασία περιβάλλοντος για 2 ώρες. Οπότε βγάλτε το 2 ώρες πριν το μαγειρέψετε.</p>
