<p>Today, that I am writing this recipe for bean soup (fasolada), Greece is dressed in white. So I woke up in a white cloud of snow! With flakes flirting with the leaves of the trees, and all together dancing lazily in the gentle breeze!</p>
<p>The first day of snow and to celebrate I decided to make a hot bean soup! There are many, many recipes for bean soup. But today I wanted to make the <strong>traditional</strong> simple recipe. A recipe for bean soup that reminds us of our childhood and mom! I will make variations for you in the future.</p>



<p>The only problem? I hadn&#8217;t soaked the beans since last night because I didn&#8217;t have the bean soup in the program! What did I do? Let&#8217;s see below! And of course, I will give you 2 versions, with soaking and without, as well as cooking with a pressure cooker and without.</p>



<p><strong>INGREDIENTS FOR 4-6 SERVINGS</strong></p>
<p>-500 gr. broad beans<br />-1 dry onion<br />-1 large carrot<br />-1 handful of celery<br />-1 spoonful of paste<br />-A pinch of cinnamon<br />-1 spoon of knorr powder<br />-3 spoons of olive oil at the end<br />-Salt<br />-Pepper</p>



<p><strong>Note:</strong> It is important to find those legumes that are &#8220;boiling&#8221;. And what do I mean by that… I used to buy pulses from a big company when I was inexperienced and while the pulses almost never boiled well, I thought it was my cooking!</p>
<p>At some point when I got my hands on pulses from another company, the pulses boiled easily and turned out great! The reason? The fresher the legumes, the better! Do not keep legumes for more than a year. So if your beans aren&#8217;t boiling&#8230;change company or better yet, buy from small producers!</p>



<h3 class="wp-block-heading"><strong>How to make the Fasolada &#8211; bean soup</strong></h3>



<h4 class="wp-block-heading"><strong><span class="has-inline-color has-vivid-red-color">Preparation</span></strong></h4>



<h5 class="wp-block-heading"><span class="has-inline-color" style="color: #0cb06e;"><strong>Method 1. No soaking:</strong> You will need a pressure cooker.</span></h5>



<p><strong>Step 1:</strong> Put the beans in a pot with 2 liters of water and nothing else! Boil for 30 minutes from the time the cooker valve whistles.</p>
<p><strong>Step 2:</strong> Once the 30 minutes are up, let the steam go away and safely open the pot, add the rest of the ingredients except the olive oil and cook on low heat for another 30 minutes in a half-covered pot. Stir frequently to prevent the food from sticking and add water, depending on how thick you want your bean soup.</p>



<p><strong>Note:</strong> If the heat is not low and the pot is half-covered, the beans will not curdle and the rest of the ingredients will not boil, so this step is very important.</p>
<p><strong>Step 3:</strong> Once the food is off, add 3 tablespoons of olive oil. Mix well and serve!</p>



<h5 class="wp-block-heading"><span class="has-inline-color" style="color: #0cb06e;"><strong>Method 2. Soaking:</strong></span></h5>



<p><strong>Step 1:</strong> In a pot, soak the beans in 1½ liters of water for 10-12 hours.</p>
<p><strong>Step 2:</strong> When ready to cook, drain and rinse the beans.</p>
<p><strong>Step 3:</strong> There are 2 ways to cook the beans, with a pressure cooker and with a simple pot. Below, we will look at both ways, because not everyone has a pressure cooker.</p>



<h4 class="wp-block-heading"><strong><span class="has-inline-color has-vivid-red-color">ΜΑΓΕΙΡΕΜΑ</span></strong></h4>



<p><strong><span class="has-inline-color" style="color: #18c784;">Σε χύτρα:</span></strong> Σε μία χύτρα, βάζετε όλα τα υλικά <strong>εκτός</strong> απο το ελαιόλαδο, και βράστε για 30 λεπτά απο την στιγμή που θα σφυρίξει η βαλβίδα της χύτρας. Μετά, ανοίξτε την χύτρα και σιγουρευτείτε ότι το φαγητό έβρασε. Αν θέλει λίγο ακόμα, συνεχίστε το βράσιμο σε χαμηλή φωτιά με μισοσκεπασμένη κατσαρόλα για 15 τουλάχιστον λεπτά. Μην ξανακλείσετε την χύτρα. Ανακατεύτε συχνά για να μην κολλήσει το φαγητό και προσθέστε νεράκι, ανάλογα με το πόσο πηχτή θέλετε την φασολάδα σας.</p>



<p><strong><span class="has-inline-color has-vivid-cyan-blue-color">Σε απλή κατσαρόλα:</span></strong> Βάλτε όλα τα υλικά εκτός απο το ελαιόλαδο και μαγειρέψτε σε χαμηλή φωτιά με μισοσκεπασμένη κατσαρόλα για περίπου 1 ώρα. Ανακατεύτε συχνά για να μην κολλήσει το φαγητό και προσθέστε νεράκι, ανάλογα με το πόσο πηχτή θέλετε την φασολάδα σας.</p>



<p><strong>Βήμα 4: </strong>Είτε με χύτρα, είτε με κατσαρόλα, μόλις σβήσετε το φαγητό, βάλτε 3 κουταλιές της σούπας ελαιόλαδο. Ανακατέψτε καλά και σερβίρετε!</p>
